1 small head napa cabbage, shredded
1 lb. FreeBird® Boneless, Skinless Chicken, poached and shredded
1 cup chopped cilantro
3/4 cup chopped green onions
3 tbsp. sesame oil
1 1/2 tbs. soy sauce
1 1/2 tbsp. rice vinegar
1/2 cup roasted, lightly salted peanuts
Salt and pepper to taste
Combine cabbage, shredded chicken, cilantro, and green onions in a large mixing bowl. Dress with sesame oil, soy sauce, and vinegar. Toss in peanuts just before serving to keep them crunchy. Season with salt and pepper to taste. Serves 6.
