1 1/4 lbs. FreeBird chicken thighs, cut into 1-2 inch pieces
salt and pepper to taste
1 large yellow onion, sliced into strips
3 large ripe beefsteak or heirloom tomatoes, diced
1/2 cup white wine
1 cup shredded Italian cheese blend or mozzarella cheese
1 tsp. dried oregano
Preheat oven to 400°F.
Heat oil in a large high-sided sauté pan over high heat. Season chicken with salt and pepper and place into pan to cook for 3-4 minutes without stirring. Stir in onions and cook for 6-7 minutes until onions are golden and softened and chicken is browned. Add tomatoes and white wine, then cover and cook over medium heat for 3-4 minutes. Remove cover, sprinkle with cheese and place in oven for 4-5 minutes until golden. Serve with green salad and some fresh bread or pasta.
