Recipe: Grilled Figgy Chicken Breasts with Goat Cheese


  • ¼ cup extra virgin olive oil
  • 1 lemon, zested and juiced
  • 1 1/2 Tbsp. pomegranate or balsamic vinegar, divided
  • 1 Tbsp Italian seasoning
  • 1 tsp granulated garlic
  • sea salt to taste
  • 1/2 tsp course black pepper
  • 4 FreeBird Boneless, Skinless Breasts
  • ⅓ cup fig preserves
  • 4 large mint leaves, chopped and divided
  • 3 oz goat cheese crumbles


  1. Combine olive oil, lemon zest, 1/2 Tbsp. vinegar, Italian seasoning, granulated garlic, balsamic vinegar and salt and pepper in a mixing bowl. Add chicken and coat well. Transfer chicken and marinate to a zip lock bag. Marinate chicken breast 3-4 hours in refrigerator.
  2. Preheat grill to medium-high heat. Brush grill grates with a little oil to prevent sticking. Grill chicken for 6 minutes on each side or until internal temperature reaches 165 F degrees.
  3. While chicken is cooking, combine fig preserves, remaining balsamic vinegar, lemon juice and half of the mint in a pan and heat through. During the last 2 minutes of grilling time, brush chicken breasts with fig glaze and top with goat cheese. Drizzle with remaining glaze and top with remaining mint. Serves 4.
