3 Quick Delish Back-to-School Lunch Ideas

You’ve done the rounds. New backpack? Check. Binders? Check. Lunch Sack? Of course. Add to that list a few new quick and easy recipe ideas that you can send to school with the kids this year. I know, I know, recipe sounds like something that’s way too hard to attack at 7am, but would I do that to you? Never! These back-to-school lunch ideas require very little know-how and ultimately use up leftovers from last night’s dinner. Keep them on hand and whip ’em up when you’ve got what it takes or improvise using the best that your fridge has to offer.
Grilled Chicken Strip Fried Rice
This is a great choice if you’re already having scrambled eggs for breakfast. Heat FreeBird Grilled Chicken strips in a sauté pan with sesame oil, shredded carrots and green onions. Mix in a few leaves of baby spinach and some leftover scrambled eggs. Toss with brown or white rice and give it a splash of sesame oil before packing into an airtight thermos.
Creamy Dreamy Chicken Linguini
Heat leftover linguini (or any cooked pasta you have) in some heavy cream. Drop in pulled or diced chicken and frozen peas and cook over medium heat until cream is thickened and peas are heated through. Season with grated Parmesan, salt and pepper and call it a homemade hot lunch.
Crispy Chicken Caesar Kit
Place about 2 cups of chopped Romaine lettuce in a large airtight container and sprinkle with shredded Asiago cheese. In smaller container, pack some heated FreeBird Popcorn Chicken or a Chicken Pattie that has been diced into bite sized pieces. Pour a tablespoon or 2 of your favorite Caesar dressing in a third container. When the lunch bell rings, kids can assemble the salad in the large container for their own fresh take on the in-school salad bar.
