Picnic Perfect Chicken Salad

Between baseball games, outdoor concerts and overall nicer weather around the corner (fingers crossed!), it’s clearly time to break out the cooler and prepare for picnic season. For me, that means playing around with my favorite salads and sandwiches. Chicken salad is always on the top of that list.
Usually I reserve the simple version of any recipe for days when I’m in a rush and just need to get food on the table or in the lunch sack. But, with chicken salad it’s different. While I appreciate a chicken salad spiked with apples and pecans or dressed with a curry yogurt, nothing satisfies my craving for chicken salad better than my quick and easy recipe. Celebrating the fresh flavor of farm-raised chicken, this is the ultimate chicken salad recipe for your picnic basket.
It won’t take long to notice that this recipe is mayo based. To make sure it’s safe at your outdoor affair, pack it up in a portable cooler with plenty of ice. Keep it in there until just before lunchtime and then dig in. Don’t forget to bring along a fresh baguette, crisp crackers or a bag of chips to scoop up every last bite.
5 Ingredient Chicken Salad
3/4 lb. FreeBird boneless, skinless chicken breast, poached
2 ribs celery, diced
1/3 cup mayonnaise*
3 Tbsp. chopped dill
salt and pepper to taste
Pull poached chicken breast into bite-sized pieces. Toss with celery, mayonnaise and dill. Season to taste with salt and pepper. Serves 2.
