3 Awesome Slaws for Grilled Chicken Sandwiches

There are the sandwiches that we eat for lunch with ham, cheese and a little lettuce, and then there are sandwiches that deserve to be in a whole different category. Start with a great piece of grilled chicken and some serious thought toward seasoning and toppings and you’re well on your way to the latter.
Whether you begin with a spicy rub, a garlicky marinade or simple salt and pepper, your chicken sandwich can hit a whole new level of goodness with the right fixin’s. Combining crunchy veggies with herbs, spices and savory flavors, a slaw can hit the spot, providing a refreshing crunch with every bite. Here are three ideas that will keep your backyard BBQ menu fresh for another few months.
Teriyaki Chicken and Sesame Slaw: Combine shredded Napa cabbage, chopped cilantro, minced chili peppers and sliced red onions. Dress with a splash of sesame oil, fish sauce and rice vinegar. Create a sandwich by placing a healthy scoop of slaw on top of grilled teriyaki chicken on a soft roll.
Chipotle Chicken and Jicama Slaw: Combine shredded jicama with diced mango, chopped mint and thinly sliced red bell peppers. Season with lime juice and orange juice. Wrap together in a tortilla or assemble on a roll with grilled chipotle marinated chicken and a crumble of cotija cheese.
BBQ Chicken and Country Cabbage Slaw Sandwich
4 cups shredded green and red cabbage
1 cup shredded carrots
1/4 cup chopped chives
1 Tbsp. chopped dill
1/4 cup mayo
1 Tbsp. red wine vinegar
salt and pepper to taste
4 boneless, skinless FreeBird chicken thighs, grilled
1/2 cup BBQ sauce
4 small ciabatta rolls, split and grilled
Combine cabbage, carrots, chives and dill in a mixing bowl. Dress with mayo and vinegar and season to taste with salt and pepper. Set aside.
Fill roll with chicken topped with BBQ sauce and a scoop of slaw. Serve extra slaw on the side. Serves 4.
