3 Amazing Grilled Chicken Salads

Those temps are creeping up and it’s just too hot to brave the kitchen. Well, at least the stove or the oven. It’s days like this when a salad for dinner is exactly what the doctor ordered. Of course, no doctor’s suggesting we go without protein for the next three months in favor of raw veggies dressed in vinaigrette. The perfect solution: grilled chicken salad.

Not only do we love the flavor of grilled chicken (you probably guessed that already!), but we love the way that you can cook up a batch of grilled chicken one evening and have plenty to spare for several salad’s worth of meals. Here are some of our favorite grilled chicken salad recipe ideas to get you through those hazy, lazy wonderful summer days.

Grilled Chicken Santa Fe Salad:

While the FreeBird’s on the grill, toss on some poblano peppers, red onions, corn and zucchini as well. Grill veggies just enough to give them a smoky char, but keep them firm enough to handle. Transfer grilled chicken and veggies to a clean cutting board and dice. Toss in a large salad bowl with crisp romaine lettuce, cherry tomatoes and crumbled cotija cheese. Dress with a lime cilantro vinaigrette and top with crunchy toasted pine nuts just before serving.

Grilled Classic Cobb Salad:

Dress a bed of baby greens with blue cheese dressing and place a mound on each serving plate. Place a strip of diced grilled chicken down the center of the salad. Line up strips of chopped tomatoes and crumbled hard-boiled eggs to one side. Add diced avocados and crumbled blue cheese to the other side.

Sesame Chopped Grilled Chicken:

Shred grilled chicken into thin strips. Toss together with shredded carrots, snow peas, cabbage and red bell peppers. Dress with a sesame soy vinaigrette and this combination is as colorful and crisp as it is refreshing and delicious!
